I sure do love to snack and this Rotel dip recipe is one of my favorite ways to snack!
Birthday party, big sports game, or just a Tuesday afternoon….I don’t need an excuse! Any day works for me.
I used to love this Chili Cheese Dip that my dad makes. But tasting chili the rest of the day didn’t sit well with me as I got older.
So I went on the hunt for an alternative cheesy dip.
Then, another mom at my local MOPS group brought this delicious Rotel dip recipe to a meeting and the rest is history!
I’ve made this easy dip recipe a handful of times now for the holidays, game day, and random parties and it is ALWAYS a hit.
So with the upcoming Super Bowl, I wanted to share this yummy option with all of you.
I love that everything gets dumped in my crock pot and it can sit on low to keep warm all day. But in my experience, it won’t last long.
Everyone keeps coming back for more of this flavorful dip! While it may not the healthiest of options, your taste buds will love this cheesy rotel dip!
Unbeatable Rotel Dip Recipe – Slow Cooker Recipe
We call this recipe the “Unbeatable Double Dip” recipe because it’s truly unbeatable and you can’t help but come back for a double dip! This easy recipe will be the star of the show at your next party!
Ingredients
- 1 pound of ground beef/hamburger
- 1/2 tsp garlic powder
- 1/2 tsp seasoned salt
- 1/2 tsp onion powder
- 1/2 tsp ground pepper
- 1 Can Of Diced Tomatoes with Green Chiles
- 1 Velveeta Cheese block (32 ounces)
- 8 Ounces of Cream Cheese
- Can Of Cream Of Mushroom Soup
Directions
- Brown ground beef in a pot with garlic powder, seasoned salt, onion powder, and ground pepper. Drain excess fat well.
- Place all ingredients in a slow cooker and melt together on the desired setting (depending on how fast you need it ready.)
- Stir occasionally.
- Once hot, put on the “keep warm” setting to prevent the dip from burning onto the sides.
Serve this delicious dip with your choice of tortilla chips. I recommend the Scoops but the blue corn tortilla chips are pretty good too!
There you have it! This is the BEST Rotel Cheese Dip you will ever have!
Unbeatable Rotel Dip Recipe
Ingredients
- 1 lb. hamburger season and fried, drain well
- 1/2 tsp garlic powder
- 1/2 tsp seasoned salt
- 1/2 tsp onion powder
- 1/2 tsp ground pepper
- 1 Can 10oz of Diced Tomatoes with green chilies
- 2 lb. Velveeta Cheese block 32 ounces
- 8 Ounces Cream Cheese Philadelphia is best
- 1 Can 10.5oz of Cream of Mushroom Soup
Instructions
- In a saucepan, brown the hamburger along with the garlic powder, seasoned salt, onion powder, and ground pepper. Drain fat.
- Place browned ground beef and all other ingredients in a slow cooker and melt together on desired setting (depending on how fast you need it ready.)
- Stir occasionally.
- Once hot, put it on the warm setting to prevent the dip from burning onto the sides.
- Serve with your choice of tortilla chips. My personal favorites are the Scoops. Blue chips and corn chips also taste good too.

Stove Top Rotel Dip Recipe Instructions
Want to make this recipe on the stovetop? No problem!
Just follow the recipe above but instead of putting everything in a slow cooker when you get to step 2, put it in a medium-sized pot or large skillet and warm on medium-low heat until all of the cheese is melted.
Instant Pot Rotel Dip Recipe Instructions
I do not recommend pressure cooking this dip recipe. However, that doesn’t mean that you can’t use your Instant Pot.
In fact, I use mine all the time for this recipe. For step 1, use your Instant Pot on Saute mode to brown your ground beef, then switch it over to the slow cooker mode at step 2.
