Are you a fan of pesto? I recently shared my recipe for pesto pork chops. It’s one of my favorite meals to fix on busy nights or when I just want something easy.
Another thing I enjoy making with pesto, especially in the summer when we have fresh tomatoes growing outside in the garden, is this pesto tomato bites recipe.
It’s a delicious appetizer or side dish!
Pesto Tomato Bites Recipe
Ingredients
- 12 ounces of Pesto Sauce
- Mozzarella cheese (shredded)
- One bakery baguette
- 5-10 Roma Tomatoes (depends on size)
Ingredient Notes
- I prefer refrigerated pesto sauce you can find in the deli section of your grocery store.
- I always buy a block of mozzarella cheese and shred it myself. It melts and tastes better that way.
Directions
- Preheat oven to 350 degrees.
- Slice the bakery baguette into slices about 1/2 inch thick and spread them across a tray.
- Spread a generous layer of pesto sauce on each slice.
- Sprinkle shredded mozzarella cheese on pesto sauce.
- Top with slices of Roma tomatoes (about 1/4 inch thick)
- Bake at 350 degrees for 10 minutes or until the cheese has fully melted and the tomato has softened.
