Easy Pesto Tomato Bites Appetizer Recipe

Are you a fan of pesto? I recently shared my recipe for pesto pork chops. It’s one of my favorite meals to fix on busy nights or when I just want something easy.

Another thing I enjoy making with pesto, especially in the summer when we have fresh tomatoes growing outside in the garden, is this pesto tomato bites recipe.

It’s a delicious appetizer or side dish!

Pesto Tomato Bites Recipe

Ingredients

  1. 12 ounces of Pesto Sauce
  2. Mozzarella cheese (shredded)
  3. One bakery baguette
  4. 5-10 Roma Tomatoes (depends on size)

Ingredient Notes

  1. I prefer refrigerated pesto sauce you can find in the deli section of your grocery store.
  2. I always buy a block of mozzarella cheese and shred it myself. It melts and tastes better that way.

Directions

  1. Preheat oven to 350 degrees.
  2. Slice the bakery baguette into slices about 1/2 inch thick and spread them across a tray.
  3. Spread a generous layer of pesto sauce on each slice.
  4. Sprinkle shredded mozzarella cheese on pesto sauce.
  5. Top with slices of Roma tomatoes (about 1/4 inch thick)
  6. Bake at 350 degrees for 10 minutes or until the cheese has fully melted and the tomato has softened.

You’ll want to put about this much cheese on each bite.

Pesto Tomato Bites Recipe

  • 16 ounces Mozzarella cheese shredded
  • 1 Baguette fresh from the bakery
  • 5-10 Roma Tomatoes the number you will need depends on size
