I’m a huge fan of Mexican food. If my husband asks me where I want to go out to eat, it’s almost always someplace for tacos. So to get my fix right from the comfort of my own home, I whip up this super easy Nacho Chicken Dorito Casserole Recipe.
Mexican Flavors Found At Home
This Mexican chicken and Doritos casserole is a major crowd pleaser. Family and friends devour it when over but it also works well for potlucks. So if you’re looking for the perfect dish, other than lasagna, to share or perhaps bring a new mom, this is it!
Nacho Chicken Dorito Casserole Recipe Ingredients
- 4 cups shredded chicken, COOKED
- 1/2 pound Velveeta cheese, cubed
- 1 can cream of chicken soup
- 1 can diced tomatoes with green chili peppers – DRAINED
- large onion, diced
- 1/2 teaspoon taco seasoning
- 1/2 teaspoon garlic salt
- 1/4 teaspoon pepper
- 3/4 cup sharp cheddar shredded cheese
- large bag of Nacho Cheese Doritos
- 1 Jalapeño Pepper
- 2 Tablespoons Lemon Juice
- fresh salsa, for garnish (can used jarred if that’s all you have)
Directions
- Prep: If you don’t have precooked chicken, bake chicken breasts in the oven until thoroughly cooked. Then shred. Cube Velveeta. Dice onion.
- Slice And Quick-Pickle Jalapeño Rounds: Carefully slice 1 large Jalapeño pepper into rounds. Place in a small bowl and pour lemon juice over the top. Stir. Set aside.
- Preheat: Heat your oven to 350 degrees.
- Combine: In a large mixing bowl, combine by stirring together:
~Cooked Chicken
~Velveeta cheese
~Chicken Soup
~Diced Tomatoes with Green Chilis (DRAIN ALL THE JUICE OFF)
~Large Diced Onion
~Taco Seasoning
~Garlic Salt
~Pepper
- Crush: Gently crush 3 cups of Doritos and add to the bowl.
- Mix: Stir ingredients until fully combined.
- Pour: Empty contents of bowl into a greased 9×13 pan. Spread ingredients evenly.
- Add Cheese: Sprinkle shredded sharp cheddar cheese over the top.
- Top With Additional Doritos: Then add 1 cup of crushed Doritos to the top.
- Bake: Place pan in the oven for 20-30 minutes or till cheese is bubbly.
- Stir Jalapeño Rounds: While baking, stir the Jalapeño pepper rounds periodically.
- Garnish: After removing casserole from oven, top with Jalapeño rounds and serve with a scoop of fresh salsa over the top.
- Enjoy!

Notes
*It's a good idea to wear gloves when slicing the Jalapeño pepper into rounds.
*For the Velveeta Cheese, I've also used Bongards loaf cheese. Any 'loaf' style that melts easily should work.
*It's VERY important to drain the juice off the diced tomatoes with green chilis. Removing the excess liquid helps to prevent the Doritos from getting soggy.
*Topping with a little salsa when serving gives this recipe the perfect final kick! I prefer to use fresh salsa that I find at my local grocery store but you can use jarred if that's all you have.
*If you don't have Doritos, you can substitute for something similar such as Fritos or Tostitos.

Jalapeño Rounds
While this recipe is being made and baked, we quick-pickle the Jalapeño rounds by soaking them in lemon juice. Throughout the rest of the prep and bake, just come back and stir periodically.
Combine Ingredients In Large Bowl
Place the cooked shredded chicken, diced onion, cubed cheese, cream of chicken soup, (drained) diced tomatoes with green chili peppers, taco seasoning, garlic salt, and pepper into a large mixing bowl.
Mix
Stir well until everything is combined.
Add Doritos
Mix 3 cups of slightly crushed Doritos into the bowl. Stir well.
Spread Into Pan
Spoon chicken mixture into a greased 9×12 pan and spreak out evenly.
Top With Shredded Cheese And More Doritos
Finally, sprinkle the sharp cheddar cheese and last cup of slightly crushed Doritos over the top. Then bake.
Top With Jalapeño Rounds
After removing from the oven, top with Jalapeño rounds.
Serve Immediately
Place each serving onto a place and serve with a spoonful of fresh salsa on top. Enjoy!
