Turkey And Harvest Dumplings

I absolutely love Thanksgiving! I love the family and friends gathered around the table. I love the laughter and how we all take time to remember how we’ve been blessed this past year. I also love the food! There’s nothing quite as comforting as a Thanksgiving meal. The weather got cold here in West Virginia over the past week and suddenly I found myself wanting to give my family some early Thanksgiving enjoyment. Voila! My Turkey and Harvest Dumplings recipe was born. This recipe is a great way to use up that left over Turkey from the holidays, or you can simply use a 3lb Turkey Boneless Turkey Breast for this recipe. Hope you enjoy it as much as we did!

Turkey and Harvest Dumplings

Ingredients:

  • About 3 lbs cooked Turkey Breast, shredded
  • I small onion chopped
  • 2 celery stalks chopped
  • 1/4 cup butter
  • 2/3 cup flour
  • pinch of salt
  • 2 cups chicken broth
  • 1 cup half and half

Dumplings

  • 1 cup flour
  • 2 teaspoons baking powder
  • pinch of salt
  • 3/4 tsp dried sage
  • 1/2 tsp dried rosemary
  • 1/8 tsp dried thyme
  • 1/2 tsp dried parsley
  • 2 TBLS melted butter
  • 1/2 cup milk

Directions:

  1. Preheat oven to 325.
  2. In a cast iron pan or Dutch Oven, (I love, love, love my Stargazer Cast Iron Skillet!) Melt butter over medium heat and cook the onion and celery for about 5 minutes or until the onions and celery are soft.
  3. Add flour and pinch of salt, stirring for at least one minute.
  4. Whisk in the chicken broth, until the mixture is free of flour lumps and then add the half and half.

4. Once mixture is bubbling, turn heat to low and fold in the shredded turkey.

5. In a small bowl sift together the flour, herbs, and pinch of salt. Add the melted butter and milk and stir with a fork.

6. Drop heaping tablespoons of the dough directly onto the hot mixture. Cover (keeping temperature on low) and cook (without lifting lid) for about 15 minutes. Uncover and finish in the oven for 5 to 10 minutes or just until the dumplings are cooked through.

Does that not look like everything you have ever wanted for dinner? Each mouthful was like a bit of turkey, gravy, and stuffing! Our family will be enjoying this one again soon!

Lets say one of my things to eat is dumplings, BUT I cannot make a dumpling that is any good. I have tried so many different recipes and nothing is any good. But I will try this with hope. And if all else fails cracker barrell here I come :-)
