Directions:

  1. Preheat:  Heat oven to 350 degrees.
  2. Boil Water:  Bring a large pot of salted water to a rolling boil.  Add spaghetti noodles and cook according to package directions.  Drain well but do NOT rinse.  Return noodles back to pot.  Add 1 jar of spaghetti sauce and mix well.  Set aside.
  3. Prepare Meat:  In a large skillet, heat 2 tablespoons olive oil over medium heat.  Add the diced onion and minced garlic and cook until soft and fragrant; about 2 minutes.  Add ground beef and 2 teaspoons Italian seasoning and brown until thoroughly cooked.  Once no pink is left, drain any grease and add 1 jar of spaghetti sauce.  Mix well.
  4. White Sauce Prep:  In a medium sized mixing bowl, combine cottage cheese, cream cheese, sour cream, and 1 teaspoon Italian seasoning.  Beat with a mixer until fully combined.  Then stir in 1 cup of mozzarella cheese.  Set aside.
  5. Prep Pan:  Coat a 9×13 baking dish with non-stick cooking spray.
  6. Add Pasta:  Pour pot of spaghetti noodles into pan.
  7. Top:  Pour white sauce mixture over the top and spread evenly to coat entire pan.

  12. Bake:  Place pan in the oven and bake for 35-45 minutes or till cheese is melted and bubbly and casserole is heated all throughout.
  13. Serve:  Immediately serve hot from the oven.

Photos Along The Way

Start by cooking the noodles according to the package.  (Personally, I prefer to stay about a minute under since the casserole will be baked as well and I don’t like mushy noodles.)  Once drained, return noodles to the pot and add one jar of spaghetti sauce; stir to coat.

Notes

*Even if you don't typically like cottage cheese, don't leave it out! You truly can't taste it but it adds to the creaminess.
*While the recipe calls for spaghetti noodles, feel free to experiment with other pasta variations if you'd like.
*Serve with a side salad, garlic bread, and fresh fruit for a well-balanced meal. I also love to pair with baked veggies.
*You can prep ahead of time and bake within 24 hours. Just cover and place in the refrigerator after assembled. Because the casserole will be cold though, be sure to add an additional 15 minutes baking time.
*Freezes well too. You can prep this recipe and assemble in a pan. Then seal with plastic wrap AND aluminum foil before placing in the freezer. Thaw completely before baking.

I made this last night for my mom and I. We have a ton of leftovers! It was sooooooo good! I used ground beef and sausage only and made less layers. Delish!
