Busy Mom Pro Tip
I brown up extra ground beef and freeze in 1 pound increments. That way, when I want to whip up a quick recipe like this one, I just quickly grab two pounds of prepped meat out of the freezer, cut up the veggies, and toss everything in my crock pot.
I have supper going in about 5 minutes and then I’m free to walk away till meal time!

Variations
As with almost any recipe, you can successfully make different variations from this Stuffed Green Pepper Soup Recipe.

*Substitute diced chicken for the ground beef.
*Add additional spices.
*Switch out the rice for a different grain or pasta.
What To Serve With Your Stuffed Green Pepper Soup Recipe:
This soup recipe is thicker, more like a stew consistency. I love that because it’s a heartier, more filling soup which means I don’t need to have too many other fillers or sides.
With that said, my family’s favorite side with this soup is garlic bread or a fresh loaf of Challah Bread. Of course, you can never go wrong pairing with a side salad or roasted veggies either!
