Ingredients For Stuffed Green Pepper Soup
- lean ground beef
- diced tomatoes with green chilis
- tomato sauce
- beef broth
- green peppers
- (other) colored peppers
- onions
- garlic cloves
- Italian seasoning
- olive oil
- Spanish rice
- fresh parsley (or dried if fresh isn’t available)
- salt + pepper
***PRO TIP:
I brown up extra ground beef and freeze in 1 pound increments. That way, when I want to whip up a quick recipe like this one, I just quickly grab two pounds of prepped meat out of the freezer, cut up the veggies, and toss everything in my crock pot. I have supper going in about 5 minutes and then I’m free to walk away till meal time!

Stuffed Green Pepper Soup Recipe
Ingredients
- 2 pounds lean ground beef
- 28 ounce can diced tomatoes with green chilis
- 29 ounce can tomato sauce
- 1 32 ounce carton beef broth
- 3 fresh green peppers
- 2 red yellow, or orange colored peppers (2 total, not 2 of each)
- 2 large onions
- 5 cloves garlic minced
- 2 teaspoons Italian seasoning
- 1 tablespoon olive oil
- package of Spanish rice 5.6 ounce ***NOT made on, just the package as is
- 2 tablespoons chopped fresh parsley or dried if fresh isn't available
- salt + pepper to taste
Instructions
- Add olive oil to skillet and brown ground beef.
- Prep the onions and peppers by dicing.
- Peel and mince garlic.
- Add all ingredients to a large slow cooker / crock pot. Stir.
- Cover and let cook on high for 3-4 hours.
- Serve.

*Use chicken broth in place of the beef broth for a different flavor.

This soup recipe is thicker, more like a stew consistency. I love that because it’s a heartier, more filling soup which means I don’t need to have too many other fillers or sides. I love that this can easily be a quick prep crock pot meal! I am looking for more of those for this upcoming school year. My goal is to use the crockpot for cooking every Monday since it will be such a busy day. This looks delicious!
