Strawberry Lemonade Frosting Recipe {So Yummy!}

During the summer months, there is nothing more refreshing than a cool glass of ice cold lemonade.  But no matter what time of year, I’m always up for dessert.  So I thought I’d bring a bit of summer into our life all year round with a delicious Strawberry Lemonade Frosting Recipe.  Our 13 year old daughter and I actually whipped this up over the weekend.  We started with a basic buttercream frosting recipe but put our heads together and turned it into something really special!

Really easy to make, this delectable Strawberry Lemonade Frosting is perfect for cakes and cupcakes.  It’s easy to work with and can be spread or piped through a decorating bag.  Everyone who has tried it raves about its perfection!  And my favorite part is that it gets the pink tint from fresh strawberries.  Plus, the perfect strawberry lemonade flavor also comes from fresh fruit.  Which means there are no unnecessary ingredients or artificial food coloring!

How To Make Strawberry Lemonade Frosting

Ingredients
  • 4 cups powder sugar
  • 2 sticks softened butter (do NOT melt)
  • zest from 1 large lemon
  • juice from 1 large lemon
  • 3 to 4 medium strawberries
  • 1-2 tsp. milk (ONLY IF NEEDED)
Instructions
  1. Puree your strawberries. I use a handheld immersion blender.
  2. In your kitchen stand mixer, whip butter for 2 minutes.
  3. Add powdered sugar, lemon zest, lemon juice, and strawberry puree. Turn on low until incorporated.
  4. Then, whip until creamy (at least 5 minutes.)
  5. After the 5 minutes, stir with a spatula and check stiffness. If too dry and stiff, add 1-2 tsp milk. But the lemon juice and strawberry puree is almost always sufficient enough. If too soft, add a couple tablespoons powdered sugar until desired consistency is reached.
  6. Frost as needed.
  7. Store any unused frosting in the refrigerator for up to 4 days.
 

I love that I can pretty much dump all the ingredients into one bowl and let my mixer turn them into a masterpiece!

The frosting should be creamy and soft but not runny.  You will be able to see small bits of the strawberry as well as the lemon zest incorporated throughout.

The frosting spreads easily over cakes, cupcakes, or cookies.  But, as mentioned above, can also be piped through a decorating bag for a variety of styles and designs.

Garnish your creations with extra strawberries or even more lemon zest.

The results look and taste amazing!  The small bits of strawberry in the frosting really add visual texture.

I do refrigerate my baked goods that I frost with our Strawberry Lemonade Frosting Recipe and just take out about 1/2 hour before serving to soften it up a little.  But it could be served straight from the fridge as well.  I love to serve up a slice of Lemon Cake featuring our Strawberry Lemonade Frosting after a delicious meal of Simple Slow Cooker Mexican Chicken, which is also a creation we came up with one day!

This looks so good! I have never tried to make anything quite like this, but my hubby's birthday is coming up and I think he'd love it! My kids always want chocolate cake, he likes when I try new cake receipes. This would be a pretty cake to make for Valentine's or Easter too!
