As I’ve gotten older, I’ve become more adventurous in what I’m willing to eat. I also love that (most) of our kids are also usually willing to at least take a bite of things . So when the main dish at a recent Bible Study was this simple, healthy Chicken And Wild Rice Salad, I didn’t even bat an eye. I just scooped a big spoonful on my plate with a smile. When I took my first bite, I was thrilled with how delicious it was too! Not only did I go back for seconds, almost every lady there did as well. So I requested the recipe to share with you all.
Simple, Healthy Chicken And Wild Rice Salad
Not only is this Simple, Healthy Chicken And Wild Rice Salad delicious, I was THRILLED with how easy to make it is too! Because life is busy, I don’t always have a lot of time to make a meal. Recently, I ran to town a few days ago first thing in the morning. Time was running short so I grabbed a rotisserie chicken and some bread. When I got home, I was able to quickly whip this up for lunch. Success!

Ingredients
1 (6.2 oz) Box Uncle Ben’s Long Grain & Wild Rice Fast Cook
1 Cup Instant White Rice
2 Cups Diced Rotisserie Chicken (You can use cooked chicken breasts if you prefer. Rotisserie chicken is just easier as it’s already seasoned and cooked.)
1¾ Cups Grapes
⅓ Cup Mayo
1 Can Water Chestnuts
⅓ Cup Sour Cream
½ Cup Cashews
Directions
- Cook both rices according to package directions.
- Cool to room temp.
- As the rice is cooling, dice up the rotisserie chicken and cut grapes in half.
- In a large bowl, gently stir both rice mixtures, chicken, grapes, water chestnuts, sour cream, and mayo.
- Spoon mixture into a dish (about 9″x9″ in size).
- Cover and chill for at least an hour.
- Sprinkle with cashews before serving.
- Enjoy!

For those of you that love to see step by step photos, I will just add them to the bottom of the post here. First, cook both rices according to package directions. Then, cool to room temp.

As the rice is cooling, it’s time to prep the rest of the ingredients. Dice up the rotisserie chicken and halve the grapes. Then, once the rice is cool, it’s time to combine ingredients in a big bowl. Gently stir together the rice, chicken, grapes, mayo, water chestnuts, and sour cream.

Spoon mixture into your serving dish and spread out evenly. Chill for at least an hour. Then, top with cashews before serving.

And enjoy! Serve however you like. It tastes great on a bed of lettuce with some fresh cherry tomatoes. I also love having a side of bread available too.
