Ingredients Needed For This Rainbow Rice Krispie Treats Recipe
One of the reasons this is a go-to treat in our home is because the ingredient list is short and the time it takes to whip up this no-bake snack is minimal.
- Salted Butter
- Mini Marshmallows
- Sea Salt
- Rice Krispies cereal
- Fruity Pebbles

Recommended Tools
- 11×7 cake pan – you can also use a 9×9 square pan if you choose
- parchment paper or non-stick cooking spray
- large saucepan or pot

Instructions
- In a large pot or saucepan, melt the butter over low heat.
- As soon as butter is melted, add mini marshmallows and salt. Stir continuously as the marshmallows are melting. This will take about 2 minutes to get a nice creamy consistency. Do NOT overcook.
- Remove from heat and add cereal.
- Stir well until fully combined.
- Spread gooey cereal mix in a pan.
- Let cool for at least 30 minutes.
- Cut and serve.

- 4 cups Rice Krispies cereal

- Prep an 11×7 or 9×9 pan with non-stick cooking spray or by lining with parchment paper. Set aside.

- Stir well, making sure the cereal if fully combined into the marshmallow cream.
- Pour mixture into prepared pan and press flat.
- Let cool for at least 30 minutes so the bars 'set'.
- Tip pan upside down onto a cutting board and cut into squares. (If you used parchment paper, just lift the bars out.)
- Serve.

- Can I use other cereal flavors? In short, yes. Feel free to substitute the plain Rice Krispies for any holiday version currently available. You can also use the Fruity Pebbles with Marshmallows if you’d like.
- What happens if I cook the marshmallows too long? If the marshmallows are cooked on too high of a heat, they tend to burn or have a slightly burnt taste. And if you overcook them, they will result in a bar that hardens too firmly to eat. Be patient during the marshmallow melting step as those two minutes make all the difference.
- Do I have to stir constantly when cooking? Yes, it’s important to scrape the bottom of your pot continuously when melting the marshmallows to ensure they don’t burn to the pot. A constant slow, gentle mixing technique is all you need. You don’t have to be aggressive.
- Why are my bars falling apart? If you don’t press the cereal mixture firmly enough into your pan, your bars won’t set well. They will become loose and crumbly and that’s when you find they’ll fall apart. If you’re struggling to get a good press, coat your rubber scraper with non-stick cooking spray to help.

These are so pretty! I have never made rice Krispie treats with Fruity Pepples but have always thought it would be really good. I am definitely going to make some with my kiddos now!
