I feel like Back-To-School season could also be referred to as, Back-To-Busy season. Anyone else share this feeling?! A lot of people seem to think that homeschooling means we spend most of our days at home, taking things easy, but that couldn’t be further from the truth! School time is just as chaotic for us as it is the next family. We seem to have activities to attend nearly every day, whether it’s meeting up with another homeschooling family, taking the kids on a field trip, our weekly run to the library, co-op, church activities, open-gym time at the local rec center…I could go on and on! There’s something going on just about every day!
One thing my husband I are in agreement on is proving our kids with nutritious meals that are also convenient. Our lives are stressful enough without the added stress of trying to prepare 3 meals a day from scratch. I just don’t have the time or the energy for something like that and I have a feeling that you don’t either. Maybe my grandmother had time to fix homemade biscuits and gravy every morning for breakfast, followed by a 5 course meal at dinner, but that was another time and not realistic for most families these days.
Today I wanted to share some of my favorite no-fuss, quick, easy dinner meals for back-to-school. These are things we eat frequently during the school year! They also include ingredients you can run into Target and grab quickly. No shopping around to find obscure ingredients you seldom use!
After a busy day, my kids are usually so hungry by dinnertime, but some days we aren’t walking in the door until after 5pm and have to leave again by 6pm for evening activities. That’s when I turn to these trusted meals that I know they love, are healthy, and that I can fix in a flash.
Quick, Easy Chicken Parmesan
This meal is so quick and very filling. I grab a bag of Tyson Chicken Breast Patties (breaded), a package of spaghetti noodles, a package of sliced parmesan cheese (or mozzarella cheese works too), and a can of spaghetti sauce. I start by cooking the chicken patties in the oven. Once they are fully cooked, I add the slice of cheese and put them back in the over until the cheese melts. While the chicken is baking, I fix a pot of spaghetti. Then I serve with either a bagged salad meal or warm up some peas in the microwave. This meal is so easy and everyone in our family loves it!
Chicken Nuggets & French Fries
This is an absolute family favorite and an extra special treat for my kids when I purchase the Tyson Chicken Fun Nuggets. The Tyson Chicken Fun Nuggets are made with 100% all natural white meat chicken plus they have whole grain breading and an adorable dinosaur shape. Every single one of my kids loves dinosaurs and inevitably the dinner conversation turns to dinosaurs, making it a great educational time for our kids too!
I purchased a deep fryer because it cooks them even faster, but they turn out great in the oven or microwave too. Then I pair the nuggets with french fries, string cheese or yogurt, plus fresh fruits and veggies. Each week I usually purchase one of those veggie platters at the store. That way our vegetables are already washed, sliced, and read for me to quickly put them on my child’s plate. I find that we eat more of them and waste less by doing it this way.
This meal is especially good if you need something your kids can eat in the car, where they won’t make a mess. I just grab a package of hamburger buns, a bag of Tyson Chicken Breast Patties (breaded), lettuce, tomato and mayo for those who want it. Then I serve it with a side of chips and some celery and carrot sticks.
As I mentioned above, purchasing a veggie tray weekly (and maybe a fruit tray too) will save you time as well. If this is a meal you will eat frequently on the road, I’d suggest purchasing the packages of portioned chips too! Then you can easily grab and go!
Ranch Chicken Wrap
For these you’ll need your favorite ranch dressing, tortillas, lettuce, tomato, shredded cheddar cheese, and Tyson Chicken Fun Nuggets. Simply cook the nuggets according to package directions. Then spread ranch dressing down the middle of a tortilla, followed by lettuce, tomato, cheese and finally the Fun Nuggets. You can cut the nuggets into pieces if you’d like, but I usually just put the whole nugget in the wrap. They are the perfect size for wraps!
You probably noticed that I mentioned a lot of Tyson products. That’s because it’s a brand I trust for quality chicken products for my family. Plus, everyone loves the way Tyson chicken products taste. I also do a lot of shopping at Target these days (our Target has huge carts that can hold 3 of my kids at once!) and they have all of our favorite Tyson products.

Breakfast For Dinner
Who doesn’t love a little breakfast for dinner every now and then?! As the school year starts, I stop into Target and stock up on a ton of frozen breakfast items from America’s favorite sausage brand, Jimmy Dean, like the Pancake & Sausage on a stick (Jake’s favorite!), Sausage, Egg and Cheese Croissant Sandwiches and Sausage, Egg and Cheese Biscuit Sandwiches. Cereal is just not filling enough for our family (for breakfast or dinner!), but these sandwiches, made with real ingredients, are wholesome and filling!
They are great when we are in a rush to get out the door in the mornings, but they also make a delicious dinner too, and all in under 3 minutes! We have a deep freezer and I never let us run out of these breakfast (and sometimes dinner) necessities once the school year starts up!
