It’s Labor Day weekend, do you have any plans? Around here, we like to use Labor Day to make sure we fit in some extra outdoor time as a family before the cooler weather hits. For us, that means a family bike ride and picnic at our favorite park, weather permitting.
Lately, Maggie (my 7 year old daughter) has really gotten into watching cooking competitions. You know, the ones where the host gives a theme and the contestants need to create recipes to go along with that theme. This has resulted in her begging me to let her create some of her own recipes in the kitchen. With our Labor Day picnic ahead of us, I decided it was time to finally let her take on her first challenge (with a little bit of help and guidance from me — she’s only 7!).
Since our picnic will also coincide with a bike ride and Maggie recently got a brand new 16″ Barbie bicycle from Dynacraft, I decided to challenge her to create a new recipe in honor of her cool new Barbie bike. My only stipulation was that it had to be a no-bake recipe.
Armed with her theme, Maggie got straight to work formulating a new recipe. I give you, Pinktastic Fruit Pudding!
Pinktastic Fruit Pudding Recipe
- 1 Package (5.1 ounces) of Vanilla Pudding
- 1 pound of strawberries, pureed briefly in a blender
- 1 cup of mini marshmallows (plus extra for garnish if desired)
- 1 can (20 oz.) crushed pineapple in juice, undrained
- 1 regular sized container of Cool Whip (thawed)
- Sprinkles to garnish (if desired)
- Red food coloring (if desired, to give it a strong hot pink look). We used the Rose Icing Coloring from Wilton
Mix together the first 4 ingredients by hand until well blended. Chill for 30 minutes. If you wish to add food coloring, blend that with the Cool Whip and then fold that into the chilled pudding mixture. Lastly, garnish with extra marshmallows and sprinkles.
Maggie is so proud of her new recipe and honestly, we all agreed that it tasted pretty good too!
