There are just some combinations that are simply unbeatable.  In my opinion, chocolate and peanut butter is one of them.  I absolutely adore desserts that blend the two seamlessly and leave me wanting more. 

While I haven’t been doing a ton of baking lately since Mike and I were trying to lose some weight, I rewarded the family recently with my No-Bake Peanut Butter Oatmeal Bars with Chocolate Chips recipe.

This sweet treat has simple ingredients that will leave your mouth watering for more of these delicious granola bars. 

We had spent the day cleaning out the basement, and it was the perfect treat!  So much so, that everyone ate two and requested that I make these more often.

There’s so much to love about this recipe.  First off, there’s no baking required!  So no need to turn the oven on and cause the room temperature in the kitchen to go up, making this a perfect recipe to enjoy during the hot summer months ahead. 

But also, I love how the dynamic duo of chocolate and peanut butter please taste buds everywhere.  They are outrageously delicious.

Ingredients:

  • 1 cup butter
  • 1/2 cup brown sugar
  • 1 teaspoon vanilla
  • 3 cups oats
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon sea salt
  • 1 1/2 cups chocolate chips
  • 3/4 cup peanut butter

Step-By-Step Photos

Because this is a stovetop recipe, there is no need to turn on the oven and heat the entire house up.  So the first step is to mix on the oatmeal base crust.

Once cooked over the burner on medium heat, press the crust base flat into your pan.

While the chocolate peanut butter layer can be melted in the microwave, I highly suggest utilizing a double boiler instead.  A double boiler helps to ensure a nice, even melt without burning any of the ingredients.

Spread the creamy chocolate layer evenly over the crust.

Top the chocolate layer with the remaining crust crumble that had been reserved earlier.  Then refrigerate for 2-3 hours, or till bars have set.

Once the bars have set, remove from the pan by lifting the parchment paper.  Place on a cutting board.

Slice into desired size with a sharp knife.

Ingredients

  • 1 cup butter
  • 1/2 cup brown sugar
  • 1 teaspoon vanilla extract
  • 3 cups quick oats
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon sea salt
  • 1 1/2 cups chocolate chips
  • 3/4 cup peanut butter

Instructions

  • Line an 8×8 baking dish (square pan) or 11×7 glass pan with parchment paper. Set aside.
  • In a large sauce pan, combine butter, brown sugar, and vanilla. Heat till the butter is melted and sugar is dissolved, stirring constantly.
  • Add oats, cinnamon, and salt. Cook, stirring constantly for 4-5 minutes.
  • Reserve 1/4 cup of mixture and pour the rest into your glass pan. Spread mixture evenly, pressing down to create a base. Set pan aside.
  • In a double boiler, melt chocolate chips and peanut butter together until a smooth consistency is reached. Although this is the preferred method for melting the chocolate, if you don't have a double boiler you can carefully melt it in a large mixing bowl in the microwave. Just make sure it's microwave-safe.
  • Immediately pour peanut butter mixture over your oatmeal mixture base.
  • Sprinkle reserved oatmeal mixture over the top.
  • Place in the refrigerator to set. This typically takes 2-3 hours.
  • Once set, remove from the refrigerator. Lift bars out of pan by gripping the parchment paper.
  • Cut into squares.
  • Serve.

Notes

Uneaten no bake oatmeal bars should be stored in an airtight container in the refrigerator.
You can also make a double batch and store the extras in your freezer for later. Just wrap them individually in plastic wrap and then place in a freezer-safe container.
A great way to add some extra health benefits to these no bake oatmeal peanut butter bars is to sprinkle a little bit of ground flax seeds on the top of the finished bars before they cool.

  1. What kind of peanut butter should I use? I like to use creamy peanut butter like Jiff or Peter Pan. If you want to limit the amount of added sugar to the recipe for healthier no bake chocolate peanut butter oatmeal bars, choose a natural peanut butter with no added sugar.
  2. Can I use dark chocolate? Sure, just know the recipe will be not quite as sweet since dark chocolate tends to have a more bitter taste. If you like less sweet, that may be a great alternative for you.

You’ll want to place a small saucepan or medium saucepan of water on the stove and bring to a boil. Next, reduce to a low simmer. Place chocolate chips and peanut butter in a metal bowl that will fit over the top of the pot of water snugly. Finally, set the bowl with chocolate chips and peanut butter on top of the simmering water, stirring very often until melted.
  4. Can I use almond butter instead of peanut butter? Sorry, but I haven’t tried this variation yet. If you try it, let me know how it turns out!
  5. Can I use agave syrup instead of brown sugar? Again, this is another variation I have not tried but I would love to hear your feedback in the comments if you give it a try!
  6. How should I store these no bake bars? You’ll want to be sure you put any uneaten bars in an air-tight container and store them in your refrigerator or freezer.

This sounds so good. I can't eat nuts but I can substitute with sunflower spread. It will be just as good to me.
