Soup, they say it’s good for the soul. While we don’t make it terribly often, I love a great bowl from time to time. But honestly, it took me years to learn how to make soup. Probably because I kept trying the same thing over and over and expected different results. (I think that’s the definition of insanity?!?)
When we first got married, I was just 20. I knew how to bake but cooking anything more than the basics was still a struggle at that time. One day, my husband mentioned wanting soup so I decided to make him some. Because it’s a favorite of mine, I went with the good ole Chicken Noodle. For some reason, it just never tasted right. After about a half dozen tries, Mike told me gently ‘it’s okay if you don’t want to make soup ever again’. I took it with a grain of salt and hung up my soup-making apron. But I’m back in the soup making business with this Hamburger Soup Recipe!
Hamburger Soup Recipe – Easy To Make!
Now that I’m in my 30s, I’ve actually learned how to make a good bowl of soup. But because it had been such a struggle for me, I wanted to share this easy Hamburger Soup Recipe for anyone who is still struggling.
Ingredients:
- 1 pound ground beef
- 1 large onion, diced
- 2 cloves garlic, minced
- 3 medium potatoes, peeled and cubed
- 4 to 5 cups beef broth, depending on preference of consistency
- 1 can diced tomatoes with green chili peppers
- 1 can tomato soup
- 2 teaspoons Worcestershire sauce
- 1/2 to 3/4 cup carrots, sliced
- 1/2 to 3/4 cup celery, cut into pieces
- 1 teaspoon Italian seasoning
- 2 bay leaves
- 1 cup Acini di pepe pasta
- salt and pepper to taste
- shredded pepper jack and sharp cheddar cheese (optional as garnish)
Hamburger Soup Recipe
Ingredients
- 1 pound ground beef
- 1 large onion diced
- 2 cloves garlic minced
- 3 medium potatoes peeled and cubed

- 2 bay leaves
- 1 cup Acini di pepe pasta
- salt and pepper to taste

Instructions
- Brown ground beef, garlic, and onion together till cooked through. (I do season my ground beef with about 1/2 teaspoon of each at this time too: season salt, onion salt, garlic salt, and pepper.
- Add potatoes, carrots, celery, broth, tomatoes, tomato soup, Worcestershire sauce, seasonings, and bay leaves.
- Bring to a boil, stirring occasionally.
- Then turn on low and cover. Simmer for 15 minutes, stirring occasionally.
- Remove bay leaves.
- Add pasta and stir.
- Simmer for an additional 8-9 minutes.
- Add salt and pepper to taste.
- Serve immediately, garnished with pepper jack and sharp cheddar cheese if desired.

Photos – Step By Step
As always, I try to take at least some step by step photos for those who are drawn more to visually learning. When I make a new recipe, I really appreciate photos!
Step 1: Brown the onions, garlic, and ground beef together until cooked thoroughly.
This will take about 5-7 minutes, depending on what level of heat you prefer to cook over. Once no pink remains, drain any fat.
Step 2: Add vegetables, seasonings, soup, tomatoes, sauce, and bay leaves.
After adding everything in, give a good stir.
Step 3: Bring to a boil and simmer.
Make sure to continue stirring periodically as your soup cooks.
Step 4: Remove bay leaves and add pasta.
Don’t forget to stir from time to time as the pasta cooks.
Step 5: Serve!
Enjoy! I like to serve our Hamburger Soup recipe with some pepper jack and sharp cheddar cheese garnished on the top. But my oldest son actually prefers to eat it plain.

I like the idea that you can make it taste different each time by adding in different toppings, ie. bacon bits or a dollop or sour cream or changing the type of cheese

This is a great recipe for cold sunday afternoons where I can use the leftovers for monday dinner
