For several years now, I seem to be making more chicken meals than beef. Even though I grew up eating mainly beef meals, I decided to start experimenting with other options after I got married. I’ve had some pretty big fails over the years. But I’ve also made some awesome meals that have become staples for our family. One really popular one with the family as well as guests has been this flavorful, easy Chicken Fajita Recipe. It has enough flavors and kick to appeal to everyone. And if you prefer no spicy flavor, you could just substitute out the can of tomatoes with green chili peppers to just plain diced tomatoes.
Flavorful, Easy Chicken Fajita Recipe
Although this recipe does take about 45 minutes of stove time, most of it is pretty effortless. Just tossing the ingredients in and letting them sauté. Then, flipping and stirring from time to time. Which leaves plenty of time to whip up a side or even just read a magazine. I usually find myself playing a game with the kids while I whip these up. But no matter what you do with your time, the results spent in the kitchen are well worth it with this recipe!
Ingredients:
- 1 Tablespoon Coconut Oil
- 1 Of Each: Green Pepper, Red Pepper, Orange Pepper, & Yellow Pepper
- Medium To Large Sized Onion
- 2# Sliced Chicken Breasts
- ⅛ Teaspoon Ground Cumin
- Dash Of Sea Salt
- ⅛ Teaspoon Chili Powder
- ¾ Cup Salsa
- 1 Can Diced Tomatoes With Green Chili Peppers
- ¾ Tablespoon Lime Juice
- Tortilla Shells or Rice (Optional)
- Shredded Sharp Cheddar Cheese
- Shredded Lettuce
Step By Step Directions
After prepping the ingredients (slicing and chopping), it’s time to start get started! Begin by melting the coconut oil in your pan and adding the onions and peppers. Then, spend a few minutes sautéing.
I love using one pepper of each color as I enjoy the mix of flavors and pop of color. However, you can alter as needed. If you only have one kind of peppers, just use all of that color.
After about 10 minutes, it’s time to add the chicken slices. Continue sautéing for fifteen more minutes and then add the spices.
Sauté for another 10 more minutes. Then add in the salsa, making sure to stir well. You can use any flavor salsa you prefer. If I have homemade salsa on hand, I love to use that. However, store bought works too.
After you have the salsa incorporated, open and pour in the can of diced tomatoes with green chili peppers. Once again stirring to incorporate.
Everything is really coming together now and your house will smell fantastic! Just finish up by adding the lime juice and sauté for about 5 more minutes.
Serve on warm tortilla shells. Top with shredded cheese and shredded lettuce. Sometimes, my husband also enjoys adding a dollop of sour cream as well.

- Slice the peppers and onion into thin strips.
- In a large skillet or fry pan, melt the coconut oil.
- Add pepper and onion pieces.
- Sauté for 10 minutes. Stir and flip occasionally.
- Add sliced chicken breast strips.
- Sauté for 15 minutes. Stir and flip occasionally.
- Add ground cumin, sea salt, and chili powder.
- Sauté for 10 minutes. Stir and flip occasionally.
- Add salsa.
- Stir.
- Add can of diced tomatoes with green chili peppers.
- Stir.
- Add lime juice.
- Sauté for 5 minutes (or till it's reduced to your preference). Stirring occasionally.
- Serve on warm tortilla shells or on a bed of rice.
- Top with shredded cheese and shredded lettuce.
