We are HUGE football fans in this house! Sundays are spent watching our favorite teams play. I’m a Dallas Cowboys fan while my husband is a die-hard San Francisco 49er’s fan. It hasn’t really been a good year for either of our teams so far, but we’re still enjoying the season. Whether we are enjoying the games at home, heading to a friend’s house to watch it, or tailgating at the stadium, having delicious food for snacking is a must! Today I want to share with you 2 of the (super easy) recipes I regularly make on game day.
5 Minute Spinach Artichoke Dip
With 3 young children, I’m pretty busy and don’t have time to make everything from scratch. When we’re headed to a friend’s house for the game, I still want it to look like I put a lot of time and energy into the dish I bring. I’m going to show you how I make Spinach Artichoke Dip in 5 minutes that looks and tastes like restaurant quality but takes just minutes. This recipe is enough for 4 adults, so adjust it accordingly if you’re around a bigger crowd.
- 1 Frozen Package of TGI Friday’s Spinach Artichoke Dip (Microwavable)
- 1/4 – 1/2 C Diced Roma Tomatos
- 1/4 C Shredded Mozzarella Cheese
Rather than use the microwave, I put the dip into a small saucepan and warm it up on medium heat. There’s no need to warm the dip before adding it to the saucepan. If you flip the package over and use a little bit of force, it will pop right out. Stir the dip frequently as it starts to melt/warm. When thoroughly heated, add the 1/4 C of shredded mozzarella cheese and stir until melted.
While the dip is warming, wash the tomato and dice it. Transfer the melted dip to a serving bowl and top with diced tomatoes.
I like to load our Rubbermaid Party Platter with veggies, add the dip to the center, and grab a bag of tortilla chips to go with it. This dip is always a crowd-pleaser and everyone always comments on how delicious it is. (Shhhh, no one has to know you hardly did a thing — it looks like you made it from scratch!) Even if we are staying home, I find that if I make this platter on Sunday, our family has veggies ready to enjoy healthy snacking for the week. Just pop the dip container into the microwave for about 30 seconds to warm it back up (it’s microwave, dishwasher, and freezer safe).
Game Day Loaded Chips
- Potato Chips (I prefer Utz for this recipe, but you can pick your favorite)
- Tomatoes (I use 4 Romas)
- 2 Cups Cheese – Colby & Monterey Jack Blend
- Cooked Bacon (about 8 slices — I like mine well done and crisp)
- Feta Cheese (6 ounces)
- 1 Medium Red Onion
- Green Onion (optional)
Preheat oven to 400 degrees. Dice tomatoes and red onion into bit sized pieces, then mix all ingredients together in a big bowl. Spread chips on baking sheet then cover the top with the topping mixture. Bake at 400 degrees for 5-8 minutes, or until cheese is melted. The great thing about this recipe is that you can adjust the ingredients to meet your preferences. If you love onion, add in some extra green onion. Want more protein? You could add some cooked hamburger meat or ham chunks. The possibilities are really endless!
These chips are so delicious that my husband and I sometimes tend to make a meal out of them. I’ll fix them at lunchtime and then we enjoy snacking on them for the rest of the day. When I know I’ll be making them, I prepare extra bacon that morning (or the morning before) with breakfast, then store it in one of my Rubbermaid Easy Find Lids containers in the refrigerator until I’m ready to use it. I also tend to make enough Loaded Chips that we can reheat them the following day for Monday Night Football. Just pop them back in the oven for a few minutes or warm them in the microwave.
