Cooler weather means lots of winter outdoor fun, but then you have to head in and try to warm up. So for me, that means it’s time to make some SOUP!
My family loves to eat soup. It’s a nourishing meal that warms the body and provides the energy we need to get through the day.
One of my favorite soups is this Crock Pot Chicken Tortilla Soup Recipe.
It’s easy to make and everyone devours it. I get rave reviews each time I make it, which means it’s definitely a crowd-pleaser!

Crock Pot Chicken Tortilla Soup Recipe
Crock Pot Chicken Tortilla Soup Recipe
Ingredients
- 2 1/2 pounds boneless skinless chicken breasts
- 64 ounces 2 quarts chicken broth
- 1 bag frozen mixed vegetables
- 10 ounce can tomatoes with green chili peppers
- 1-2 large onions
- 1-2 large bell peppers any color
- 1 teaspoon sea salt
- 3/4 teaspoon pepper
- 1 teaspoon garlic powder
- 3/4 teaspoon onion powder
- 1 teaspoon chili powder
- 8 ounce package of cream cheese
- shredded sharp cheddar cheese for garnish
- Cool Ranch Doritos the blue bag (for garnish)
Instructions
- First, dice up onion and pepper.
- Place all ingredients EXCEPT the shredded sharp cheddar cheese and Cool Ranch Doritos into a slow cooker.
- Cover and cook on high for 6 hours. You could also cook on low for 8 hours.
- Remove chicken and either shred or dice into cubes. Then return back to the slow cooker.
- Stir well to combine.
- Serve into small bowls with shredded Sharp Cheddar Cheese and Cool Ranch Doritos sprinkled over the top as garnish.

Add All Prepped Ingredients To Your Crock Pot
The beauty of this recipe is that all the ingredients are tossed into your slow cooker and then forgotten about for most of the day! While the recipe calls for 6 hours, you could definitely alter by setting the temp to low if you needed to let it cook longer.
Give A Stir Before Serving
Once the ingredients are all cooked and you’ve shredded or cubed the chicken, be sure to thoroughly stir before serving.
End With Your Garnishes
To add both a garnished flair and the perfect finishing flavor, top your bowl of soup with shredded sharp cheddar cheese and some crushed Cool Ranch Doritos (the blue bag).
Can Also Be Made In A Pressure Cooker
As mentioned in the recipe, you can also make this recipe easily in your Instant Pot or other brand pressure cooker. Just put all ingredients except the garnishes and cream cheese into your pressure cooker. Seal and cook on high pressure for 25 minutes. Release pressure. Remove chicken and shred or slice. Return the chicken back to the pot. Add cream cheese. Stir. Then serve in bowls topped with shredded cheddar cheese and Cool Ranch Doritos as garnishes.

this is my sisters favorite soup she makes it at least once a month or more. I have never tried, she lives a long way from me. But this looks easy and simple to make. Wondering if it freezes? As a senior I like to fix once and eat balance out of the freezer.
