One pot pressure cooker meals (Instant Pot meals) are becoming increasingly more popular with the busy lifestyles we all lead. I recently acquired one of these one-pot wonders and, while I haven’t yet mastered brown rice, we’ve had a couple of other amazing meals.
So as I work through trial and error and find recipes that are a hit, I wanted to share them with you! (Since I prefer to try something someone personally recommends versus a random recipe from a cookbook, I thought others may too!)
Our second pressure cooker/ Instant Pot hit recipe just so happened to be a Creamy Italian Chicken Pasta that I threw together. Almost everyone had seconds and a few even had thirds!
Instant Pot Creamy Italian Chicken Pasta Recipe
The biggest draw to Instant Pot Meals (pressure cooker meals) is that most meals happen quickly in one pot. Sometimes I wait till the last minute to plan lunch and I need a filling, wholesome meal that can get on the table quick. Well, a pressure cooker helps make that happen!
Easy To Make Creamy Italian Chicken Pasta
Start by cubing 1 pound of chicken breasts. I buy the small pieces that work well for wraps and use a sharp knife so I actually do this when frozen. Then, I just cut up the onion into small pieces and dice the garlic.
After that, I just start tossing the ingredients into the pot, give a stir, and start it up!
After 10 minutes, I set my cooker to warm for 5 more minutes. Then, I open the lid, add the cheese, stir, and serve! SO EASY!
It turned out creamy, tasty with a small kick (still kid-friendly), and the best part is that there were no leftovers because it was such a hit! I served this yummy dish with salad, biscuits, green beans, and fresh fruit. It was amazing!

Creamy Italian Chicken Pasta Instant Pot Recipe (Pressure Cooker Recipe)
Equipment
Ingredients
- 1 pound raw chicken breasts cubed
- 16 ounces penne pasta
- 1 can diced tomatoes w/green chilies
- 1½ cans water
- ½ teaspoon sea salt
- 1 tablespoon basil
- ¼ teaspoon pepper
- 1 clove garlic chopped
- ¼ teaspoon paprika
- 1 teaspoon oregano
- 4 ounces cream cheese
- 1 small onion
- ¼ cup Parmesan cheese
Instructions
- Cube chicken and dice onions and garlic.
- In pressure cooker add: all ingredients except cream cheese.
- Stir and press pasta down into liquid.
- Close lid and set timer for 10 minutes.
- Once done, set to warm for another 5 minutes.
- Release pressure, open the cooker, and stir.
- Add cream cheese and mix well.
- Serve!

My husband couldn’t stop raving about this dish the entire meal and I was really impressed by the delicious blend of flavors and creamy end result. Definitely restaurant worthy!

Do I Have To Use an Instant Pot?
No, you can use any brand of pressure cooker for this recipe. In fact, I use the GoWise Pressure Cooker.
Can I Use Fresh Tomatoes?
Yes, absolutely! I imagine this recipe would taste even more amazing if you use fresh tomatoes. I prefer Roma and Cherry tomatoes.
Can I Make this Gluten-Free?
I haven’t tried it with gluten-free pasta yet, but I would assume it would work just fine. If you make it with gluten-free pasta, please comment below and let me know how it tastes! You could also swap out the pasta for rice to make this recipe gluten-free.
