Country Cowboy Casserole Recipe

 

Casseroles are one of my favorite meals because they are so easy to fix on a weeknight when life is busy! Country Cowboy Casserole utilizes both your Instant Pot (or another pressure cooker like the Go Wise 8ct Copper 12-in-1 Pressure Cooker) and oven to make a delightfully cheesy pasta dish that the whole family will enjoy! Don’t have an Instant Pot? Don’t worry – I’ll give you instructions on fixing this great recipe without one as well!

One of the things I love about this recipe is that I often already have all of the items on hand at home, even if it wasn’t something I planned to fix that week. It uses lot of kitchen staples like cream of chicken and pasta. You can use whatever type of pasta your family enjoys most. Rotini, shells, bowties, etc. – they would all work well!

Ingredients

  • 1 box shell pasta
  • 1 bag mixed vegetables
  • 2 cups shredded colby jack cheese
  • 1 cup shredded sharp cheddar cheese
  • 2 cans cream of chicken soup
  • cup milk
  • 1 can French fried onions
  • ½ teaspoon onion salt garlic salt, seasoning salt, and pepper (each)
  • 2 lbs raw chicken breasts
  • water

Instructions

  • Preheat oven to 375 degrees. Grease a 9x13 pan and set aside.
  • In your pressure cooker, place raw chicken breasts, onion salt, seasoning salt, garlic salt, pepper, and enough water to adequately cover. Close lid and set for poultry (12 minutes).
  • Fill a large pot ⅔ full of water and bring to boil. Add pasta and mixed vegetables and cook for the time stated on box (typically about 10 minutes).
  • Drain pasta and vegetables and pour into a large mixing bowl.
  • When your chicken is done, drain and shred. Add to large mixing bowl.
  • Add 2 cups shredded cheese, soup, milk, and ½ of the French fried onions into a bowl and stir well.
  • Pour mixture into prepared pan.
  • Top with the Sharp Cheddar shredded cheese and remaining French fried onions.
  • Bake at 375 degrees for 20-25 minutes.
  • Serve immediately.

Notes

If you don't have a pressure cooker, don't despair! You can still fix this delicious recipe without it. The other quick-fix option I like is to boil the chicken until cooked through. Then you'll shred the chicken and mix in the seasonings. Then follow the rest of the instructions.

Here are some photos of the process for you to see, although I think the recipe is pretty self-explanatory. You’ll notice the chicken is frozen – that’s another reason I love being able to use a pressure cooker. If you don’t have a pressure cooker, you can also put frozen chicken in boiling water to cook quickly that way as well.

I was intrigued by the name of the recipe Country Cowboy Recipe but boy am I glad to clicked on the link. This recipe is perfect for a family get together as people of all ages will love it. I always usually have all those ingredients on hand as well. Can't wait to try it.
