What’s A Sheet Pan Meal?
Are you new to the term ‘sheet pan meal’? If so, it’s a fancy way to label a recipe that takes just ONE pan and you bake everything together in the oven.
They are truly all the rage these days. But with good reason. The prep is short and sweet and the clean up is super simple.
It’s a win – win! And since my kids are on dish duty, they especially love sheet pan dinners since there’s just one pan to wash. So are you ready to get started?
Healthy, Easy Chicken Fajita And Veggies Sheet Pan Meal Recipe
Recently, I tried a new recipe and it was the biggest hit! I am blown away each time I make a sheet pan dinner with how easy they are but this one was also packed with some major flavor.
I seriously can not rave about it enough. Colorful, flavorful, and do I need to mention once again……. EASY!?!?
The Chicken Fajita and Veggies Sheet Pan Recipe
Seriously, this Easy, Healthy Chicken Fajita And Veggies Sheet Pan Meal Recipe is amazing.
Ingredients
- 2 lbs Chicken Breasts, cut into strips
- 1 1/2 Pounds (Baby) Little Potatoes
- 1 Small Red Onion
- 1/2 Green Pepper
- 1/2 Red Pepper
- 1/2 Orange Pepper
- 1/2 Yellow Pepper
- 1/2 Tablespoon Chili Powder
- 1/2 Teaspoon Garlic Powder
- 1/2 Teaspoon Ground Cumin
- 1/2 Teaspoon Garlic Powder
- 1/2 Teaspoon Dried Oregano
- 1/4 Teaspoon Paprika
- 1/4 Teaspoon Black Pepper
- 2 Teaspoons Sea Salt
- 1/8 Cup Olive Oil
Directions
- Preheat oven to 375 degrees.
- Line a large sheet pan with parchment paper.
- Slice onions and peppers.
- Scatter chicken breast strips, Little Potatoes, onion, and peppers over the lined sheet pan.
- Sprinkle with seasonings.
- Drizzle with olive oil.
- Bake for 45 minutes.
- Enjoy!

- 1 Red Onion small
- 1/2 Green Pepper
- 1/2 Red Pepper

- 1/2 Teaspoon Ground Cumin

Tips To Make This Recipe the Best
It’s always best to use fresh ingredients, whenever possible. That means fresh peppers, onions, and potatoes, not frozen ones.
Of course, sometimes when you are busy that’s just not possible. You can certainly make this recipe with frozen veggies if needed. I’m a mom, so I get it!
The same thing goes for your chicken. Fresh chicken is always going to taste better than frozen. I also find that I notice a difference when I purchase my meat from a local butcher rather than buying the grocery store brands.
Again, I know it’s not always possible in today’s busy world, but something to strive for if you can.
Can You Freeze It?
Yes! In fact, sometimes I double or triple this recipe and then save portions in freezer bags to fix on busy weeknights. Simply mix all ingredients (uncooked) and place in the freezer.
This is a great freezer meal to prep and have on hand when you’re expecting a new baby or even to take a meal to a new mom so she can fix when needed.
What Kind of Sheet Pan Should You Use?
I went through a number of different sheet pans before I found one that was really high quality. The others it seemed like would rust SO easily. I found this sheet pan and it has been holding up so well that I purchased a second one.
I even run ours through the dishwasher without any problems. I like owning 2 because if one is in the dishwasher I always have a backup.
Do You Have to Use Parchment Paper?
I know this is one of those kitchen items I seem to run out of all the time and then I forget to buy more, that and foil. It’s quite alright if you don’t have parchment paper.
Just spray your sheet pan generously with some cooking spray (vegetable oil, canola oil, or olive oil would be fine) and that will help prevent your meal from sticking.
Low Carb
Are you on a low-carb diet? If so, just omit the potatoes for a yummy, easy low-carb meal!
A Variation
Love this meal but looking to change things up a bit? Another thing we like to do is omit the potatoes and then add shredded Mexican cheese blend to the final 2 minutes of baking.
Spoon into flour tortilla shells for another easy weeknight meal.

I still haven't tried this , but I'm putting it on the menu for this week. Thank you for the recommendation on the sheet pan! I definitely struggle to find ones that do not rust so quickly! I have that problem with pizza pans too. I probably should make the low carb version, but I love potatoes so I have to use them in it too!
