Cheesy Chicken Broccoli Rice Casserole Recipe

If you’re looking for a super quick and easy ‘dump’ recipe for dinner, this is a great choice! It has lots of flavor, some veggies, protein, and CHEESE!

Cheesy Chicken Broccoli Rice Casserole.

Ingredients

  • 1 package chicken tenderloins
  • 2 packages Knorrs rice (Chicken Fried Rice flavor)
  • 2 cans cream of chicken soup
  • 1 can chicken broth
  • broccoli florets
  • 8 ounces colby jack shredded cheese (NOTE: You can use pre-shredded but getting a block and shredding your own is a GAME CHANGER!)

Directions

  1. Pre-heat oven to 350 degrees.
  2. Take the raw chicken and dice it into cubes. Set aside.
  3. Spray a 9×12 cake pan with non-stick cooking spray.
  4. Pour the 2 packages of rice into bottom of the pan.
  5. Add cream of chicken soup, chicken broth, and diced chicken. Mix until completely incorporated.
  6. Sprinkle broccoli florets evenly over the top.
  7. Top with your shredded cheese. (Pro Tip: Buying a block and shredding your own cheese may take a little more time but the results are worth it! It melts better and has a fresher taste!)
  8. Sprinkle Italian seasoning over the top.
  9. Cover and bake for 30 minutes.
  10. Remove cover and bake an additional 15 minutes.
  11. Enjoy!

This recipe is one of my simplest to make because you don’t need to dirty any extra bowls! Everything goes straight into the baking dish. Even the chicken can be diced with a scissors to avoid dirtying a cutting board and knife.

I used to ONLY buy pre-shredded cheese until about a month ago! Someone recommended just giving a try to shredding my own block. I’d always balked at that in the past because I assumed it would take ‘so much more time’. To be honest, shredding an 8 ounce block with my box cheese grater literally takes 2 minutes or less. (I’ve been tossing around the idea of getting a rotary grater instead….anyone have one? Is it worth it? Or just stick with the box grater?)
