So even though mornings can be tough, I try to start my family’s days off with a hot, home-cooked breakfast. Because if I’m truthful, I love the simpler things in life such as caring for my family and whipping up delicious meals for them.

What’s For Breakfast?

I feel like breakfast is the trickiest meal to cook healthy for. Many breakfast foods and recipes are laden with sugar. While I’m all for a donut as a treat from time to time, I’d prefer the meals I create for my family to be more nourishing. I want the flavor and goodness to come from high quality, protein filled foods. Since I know I”m not alone in these desires, I wanted to share a really easy, delicious Bite Size Egg Muffins Recipe with you today! The convenience that Farmland Foods quick, easy-to-use protein offers helps make my job easier as I can get this meal on the table in just over 15 minutes! Plus, my local Walmart carries Farmland products so they are easy to grab on my grocery runs.

Bite Size Egg Muffins Recipe Ingredients

This recipe features flavorful meats from Farmland Foods, hearty eggs, sharp cheeses, and fresh vegetables to deliver the best flavors in just minutes!

Bite Size Egg Muffins Recipe
  • 1 dozen eggs
  • Farmland Bacon
  • 1/2 Onion
  • 1/2 Green Pepper
  • 1/2 Red Pepper
  • Shredded Sharp Cheddar Cheese
  • Salt & Pepper
  • optional: Farmland Diced/Cubed Ham

Instructions:

  1. Preheat your oven to 425 degrees.
  2. Cook the Farmland Bacon in whatever manner you prefer. (Fry in a pan or bake in the oven.) Let cool slightly and then crumble.
  3. Crack your eggs into a bowl and whisk well. (TIP: I usually add about 1-2 tablespoons of water to help them beat easier.) Set aside.
  4. Dice your onion, green pepper, and red pepper. Set aside.
  5. Grease a large mini muffin pan with non-stick cooking spray.
  6. Pour egg mixture into each mini cavern, about 2/3 full.
  7. Sprinkle with a little salt and pepper
  8. Sprinkle into the egg mixture the desired amount of diced onions and peppers.
  9. Add shredded cheese over the top.
  10. Top with your crumbled Farmland Bacon and, if desired, Farmland Diced Ham or Cubed Ham.
  11. Bake for about 10-12 minutes (or till the eggs are thoroughly cooked through.)
  12. Remove from oven and serve immediately.
  13. Store any uneaten Bite Size Egg Muffins in a sealed container in the refrigerator.
