So it’s no surprise to my husband when he asks what’s for dinner and I answer ‘enchiladas’. But there is one thing I didn’t love about making my favorite dish…the work involved! So that’s why this family-friendly Beef Enchilada Casserole Recipe is the perfect solution, it’s all the delicious flavors without the rolling and stuffing.

Ingredients
- 1 pound ground beef
- 1 teaspoon taco seasoning
- 1/4 teaspoon sea salt
- 5 to 10 ounces enchilada sauce (based on your flavor preference)
- 1 cup thick and chunky salsa
- 1 can diced tomatoes
- 1/2 cup sour cream
- fresh or dried cilantro
- 14 (6″) flour tortilla shells
- 1 1/2 cups Colby Jack shredded cheese
- 1 1/2 cups Mozzarella shredded cheese
Instructions
- Preheat oven to 350 degrees
- In a large skillet, add ground beef, taco seasoning, and salt. Brown over medium heat until fully cooked. Drain any excess fat, if needed.
- To the cooked beef, add enchilada sauce, salsa, diced tomatoes, and sour cream.
- Stir mixture until all ingredients are fully incorporated.
5. Bring meat mixture to a boil and then simmer for an additional 4-5 minutes.
6. While the meat is simmering, cut tortillas into 1-inch strips.
7. Spray a deep pie pan or rectangular dish with non-stick cooking spray.
8. Arrange half the cut tortilla strips in the bottom.
9. Top with half the meat mixture.
10. Spread 3/4 cup Colby Jack cheese and 3/4 cup mozzarella cheese over the meat mixture.
11. Sprinkle with cilantro.
12. Repeat layers one more time.
13. Place pan in the oven and bake for 10 minutes or till the cheese is bubbly.
14. Serve immediately.
